Storage Order and FIFO
Cooler storage order is set by minimum internal cooking temperature, lowest on top and highest on the bottom. This hub covers what FIFO stands for in food safety, the full shelf order, the six-inch rule, date marking, and the general storage rules both ServSafe exams test.
Storage is where food spends most of its life in an operation, and where two separate failures hide. One is contamination, which storage order and separation control. The other is age, which stock rotation and date marking control. Both get tested, and they are tested together.
What does FIFO stand for in food safety?
FIFO stands for First In, First Out, the stock rotation system in which the oldest product is used before newer product of the same item. In practice it means the delivery that arrived Monday gets used before the one that arrived Thursday, every time.
FIFO is implemented with four habits:
- Date every item on receipt or on preparation, with a use-by or discard date.
- Shelve new stock behind or beneath older stock, so the oldest item is the one a cook reaches first.
- Use the product at the front. The system fails the moment somebody grabs the fresher case because it is easier to reach.
- Discard anything past its use-by date, and check for it during routine storage walkthroughs.
FIFO applies everywhere, not only in the walk-in: dry storage, freezers, reach-ins, prep coolers, and the pantry. Frozen product still ages, and dry goods still expire.
The exam usually presents FIFO as either a definition question or a short scenario where somebody reaches past the older case. The correct practice is always to use the oldest product first.
FIFO and date marking work as a pair. Date marking tells you how old something is, and FIFO makes sure the oldest gets used while it is still good. Neither one does much alone: a dated container nobody rotates still expires on the shelf, and rotation without dates is guesswork.
The cooler storage order
Food is arranged in a cooler by minimum internal cooking temperature, with the lowest cooking temperature on top and the highest on the bottom. The reason is drips. If raw poultry leaks, it must not land on anything that will be cooked to a lower temperature or served without cooking.

A memory aid that survives exam pressure: R-S-B-G-P, for Ready-to-eat, Seafood, Beef and pork whole cuts, Ground meat, Poultry.
Seafood and whole cuts both cook to 145F, and the exam knows that looks ambiguous. Seafood goes above whole cuts. If a question puts those two in play, that is the ordering being tested.
Ready-to-eat food always goes on top. That rule holds even when the ready-to-eat item feels less risky than the raw one below it, because ready-to-eat food has no remaining kill step.
General storage rules
These are short, concrete, and heavily tested.
- Six inches off the floor. All food and supplies are stored at least 6 inches (15 cm) above the floor. It allows cleaning underneath, keeps mop splash out of the product, and removes pest harborage.
- Store food away from walls, for the same reasons.
- Chemicals are stored separately from food, and never above it. If a separate room is not available, chemicals go on a lower shelf, in their original labeled containers, never on the same shelf as food or food-contact items.
- Label working containers of chemicals with the common name of the product.
- Do not reuse single-use containers to store food. They were not built to be cleaned and they will not come clean.
- Store food in clean, food-grade, nonabsorbent containers with tight lids. Cardboard is not a food container, and it also harbors pests.
- Keep unwashed produce separated from ready-to-eat food.
- Do not overload coolers. Air has to circulate for a unit to hold temperature.
- Check the temperature of the food, not just the air. A cooler reading 40F on the door display can still have a warm pan in the back corner.
Cold storage numbers to hold onto: coolers keep TCS food at 41F (5C) or lower, and freezers are kept at a temperature that keeps food frozen solid, commonly 0F (-18C). Freezing stops growth. It does not kill anything.
Date marking
Ready-to-eat TCS food that will be held longer than 24 hours must be date marked, and it must be used or discarded within seven days when held at 41F (5C) or lower. The day of preparation or opening counts as day one.
Prepare chicken salad on Monday and Monday is day one, so the use-by date is the following Sunday. Open a commercial package of deli turkey on Thursday and the use-by date is the following Wednesday.
Three refinements the exam likes:
- If a manufacturer's use-by date falls before the seven-day mark, the manufacturer's date wins.
- Freezing pauses the clock. Prepare on Monday, freeze on Wednesday, and four days remain when the food is thawed.
- When ingredients with different dates are combined, the batch takes the oldest date.
Food Handler versus Manager: how deep to go
Food Handler candidates need FIFO by name and meaning, the cooler storage order, the six-inch rule, the rule that chemicals never go above food, and the basic idea of date marking. Questions are direct.
Manager candidates need all of that plus the reasoning behind the storage order, cold storage monitoring including checking food temperature rather than air temperature, the full date marking arithmetic with the freezing and combining rules, the prohibition on reusing single-use containers, separation of unwashed produce, and how storage controls become written procedures inside a food safety management system.
