Contamination means something got into food that should not be there. There are three kinds, and the exam expects you to be able to sort an example into the right one.

Biological contamination causes most foodborne illness. It is the biggest category by far, and almost everything else in this guide exists to prevent it.

Chemical contamination is nearly always a storage or labeling failure. Chemicals go below food, never above it, and always in their original labeled container or a container clearly labeled with what is inside. Never put a chemical in an empty food container, and never put food in an empty chemical container. Both directions are violations.

Physical contamination is prevented by wearing a hair restraint, taking your jewelry off, covering cuts, keeping shatterproof shields on lights, and looking at what you are doing.

Exam Tip: Sort the example, not the feeling. A hair in the soup is physical. Sanitizer residue on a plate is chemical. Salmonella on chicken is biological. Broken glass in ice is physical. A cleaner stored above a prep sink is a chemical hazard.

Bacteria, and Why Time and Temperature Matter

Bacteria are single-celled organisms. Some are harmless, some are useful, and some make people very sick. The ones that matter to you share a pattern: given the right conditions, they multiply fast. A single bacterium can become millions over a few hours in a warm pan of rice.

Six conditions help bacteria grow. The acronym is FAT TOM:

You cannot change what food is made of. You cannot change its acidity or its moisture. The two things you control on a shift are temperature and time. That is the entire reason food safety is built around thermometers and timers.

Viruses

Viruses work differently from bacteria. They do not grow in food. Food is just the ride. A virus gets into food from a person's hands or from contaminated water, and even a tiny amount can make someone sick.

The two that matter most:

  • Norovirus. The leading cause of foodborne illness outbreaks. Extremely contagious, spread by the fecal-oral route, which in a kitchen means unwashed hands after the restroom. It survives on surfaces and resists many sanitizers.
  • Hepatitis A. Attacks the liver. Causes jaundice, a yellowing of the skin and the whites of the eyes. Also spread by unwashed hands.

Both of these are handler-to-food illnesses. Cooking will not save you from a virus that got onto a salad after the cooking step. The prevention is handwashing, staying home when you are sick, and not touching ready-to-eat food with bare hands.

Exam Tip: Viruses do not grow in food. They are carried by food. Norovirus and Hepatitis A are both spread mainly by poor hand hygiene, and both are prevented by handwashing and no bare-hand contact with ready-to-eat food.

Parasites and Fungi

Parasites live on or inside a host. They matter mostly in seafood and in some wild game. The controls are buying from approved suppliers, cooking to the required temperature, and the freezing requirements that apply to fish served raw or undercooked.

Fungi means molds and yeasts. Mold spoils food and some molds make toxins. If food is moldy, throw it out. Do not cut the mold off and serve the rest, except for a few hard cheeses and salamis where your operation has a specific approved procedure. If you are not sure, ask your manager.

The Big Six Pathogens

Six pathogens are singled out because they spread very easily from food handlers to food and cause serious illness. They are known as the Big 6:

Here is why they matter to you personally. If a doctor tells you that you have any of these six, you must tell your manager, and you cannot work until the health department says you can come back. That is true even if you feel completely fine by then.

Exam Tip: You will be asked to identify the Big 6 or to spot the one that does not belong. Learn the list: Salmonella Typhi, nontyphoidal Salmonella, Shigella, Shiga toxin-producing E. coli, Hepatitis A, and norovirus.

Food Allergens: The Big 9

An allergen is a protein in food that triggers an immune reaction in some people. Reactions range from itching and hives to anaphylaxis, which closes the airway and can kill within minutes.

The FDA recognizes nine major food allergens:

Sesame is the ninth allergen. It was added by the FASTER Act of 2021 and took effect in January 2023. A lot of older study guides still list only eight. If a practice question anywhere tells you there are eight major allergens, that material is out of date.

Exam Tip: There are nine major allergens, and sesame is one of them. Any answer option that says "eight" or that leaves sesame out is wrong.

Cross-Contact Is Not Cross-Contamination

These two terms sound alike and mean different things. The exam tests the difference.

That second row is the point. Allergens are proteins, and they survive cooking. If peanut residue gets into a sauce, boiling that sauce for an hour does not make it safe for someone with a peanut allergy. There is no cooking step, no rinse, and no scraping that fixes cross-contact.

How cross-contact happens in a real kitchen:

  • The same tongs used for breaded shrimp and then for a plain grilled chicken
  • Fryer oil shared between breaded items and fries
  • A cutting board used for a sandwich with cheese and then for a dairy-free order
  • A spoon put back into the wrong container
  • Flour dust drifting across a prep table
  • A knife wiped on an apron instead of being washed

What to do if cross-contact has occurred:

  1. Throw the food away. All of it.
  2. Clean and sanitize every surface, tool, and piece of equipment that may have been involved.
  3. Remake the dish with clean ingredients on clean equipment.

Exam Tip: When a question says cross-contact happened, the answer is discard the food, then clean and sanitize the surfaces. Wrong answers will offer to cook it longer, rinse it off, pick the allergen out, or serve it to a different guest. None of those work.

What to Do When a Guest Tells You About an Allergy

If a guest tells you they have a food allergy, this is not a preference and it is not fussiness. Treat it as a medical instruction.

  1. Tell the kitchen immediately. Say the allergen out loud, and make sure the ticket is marked.
  2. Do not guess about ingredients. If you do not know what is in a dish or a sauce, find out. Check the actual container, not your memory.
  3. Use clean everything. Clean hands, clean gloves, clean board, clean pan, clean utensils. Wash, rinse, and sanitize shared equipment before using it, or use dedicated equipment.
  4. Hand-deliver the plate where your operation's procedure calls for it, so the allergen-free plate does not get mixed up on the pass.
  5. Never tell a guest a dish is safe unless you know. If you are not certain, say you are not certain and get the manager.

Written allergen notification. Operations must give guests written notification of the major allergens in the food they serve or sell. This can be physical, such as brochures, table tents, signage, or an allergen column on the menu. It can also be electronic, such as a website, an app, a digital menu board, or a QR code. Telling a guest verbally is good service, but it does not replace the written notification.

Exam Tip: Allergen notification must be written. Electronic methods count: a website, an app, a digital menu, or a QR code all satisfy the requirement. A server's verbal description on its own does not.
